Drewry Farms Inc. is a family-owned business specializing in pure maple syrup. For four generations, our family has been making maple syrup in our woods overlooking the Onion River Valley in Sheboygan County. Presently, we have over 120 acres of sustainably managed hardwood forest consisting of over 6,000 taps.
In the late winter and early spring, when the nights are below freezing but above freezing during the day, an amazing thing starts to happen… The sugar maple trees begin producing sap, which the tree uses to make their leaves, and humans use to make maple syrup! Sap is mostly water, but also contains a small percentage (usually around 2.0%) of sugar. From these trees we collect a small portion of all the sap produced by the tree in high quality tubing into collection tanks throughout our woods. From those tanks, we bring the sap to our sugar house, where it is first run through a reverse osmosis machine to remove up to 75% of the water. Then, we boil that sap in our evaporator until it becomes syrup. Nothing added.
